Skirt & Dirt is a hawker stall on the upper floor of Tiong Bahru Market, one of the city's best-loved food centres. Its pitch is the cheese skirt: grated cheese crisped on the griddle until it forms a lacy, crunchy frill that spills out around the beef patty.
The Cheese Skirt Burger is S$9.80 on its own or S$11 with fries; cheese fries cost S$1 more and loaded Dirt Fries S$2 more. The Big Bad Wolf Pork Burger (S$8.80) and Crispy Chicken Crunch Burger (S$7.80) are the alternatives, and fish and chips and a hamburg steak with sausage round out the menu.
It suits a cheap lunch while exploring Tiong Bahru's shophouse cafés and bookshops. The pork burger means it is not halal. The market reopened in July 2025 after renovation, so the stall's hours may still shift; it is closed on Mondays.
